Do you have reset day? How about a reset date? Truth be told, we are all time travelers and seasonal creatures. Back to school signals something to us as does the start of a new year or the beginning of another week.

Apple-Lemon Breakfast Bowl
My traditional reset has been on Sundays which probably has something to do with growing up in a Christian household but this year, I’m working to change that up so that everyday will be reset; a chance to refocus, aim higher, and maintain clarity around my intentions. I do that by thinking about the previous day, looking forward to the opportunities of the next 24 hours and asking for help because none of it is accomplished in my own strength.
Today one of the ways that I’m doing this is with a terrific Apple-Lemon Breakfast Bowl modified from Forks over Knives. Admittedly high in sugar, the 11 grams of fiber in each serving is really filling and perfect for a scorching hot Arizona day. And the other perfect part is that all but the cinnamon are local ingredients – reducing food miles and keeping it close to home.
Apple-Lemon Breakfast Bowl
- 4 or 5 medium apples of any variety
- 5 – 6 pitted dates
- juice of one lemon
- 6 pecan halves
- 1/4 tsp cinnamon

5 simple ingredients
Core the apples and cut into large pieces. Place the dates, half of the lemon juice, pecans, cinnamon, and three quarters of the apple in the bowl of a food processor. Puree until finely ground, scraping down the sides of the bowl as needed. Add the remainder of the apples and lemon juice and pulse until the apples are shredded and the date mixture is evenly distributed.
